News from the allotment

Down at the allotment: After the Runner Bean glut, and the French Bean glut, now thankfully in the freezer, there is a Courgette glut. As some of you are vegetarians, here is a good recipe:

3 or 4 courgettes, (strip lengthwise, but leave alternate green strips on) and dice
2 good sized new potatoes, peel or scrape and also dice.
Marinate in a bowl with 1/2 tsp salt and 1/2 teaspoon turmeric
Drain after an hour or so
In a wok, heat a little oil, and fry the courgettes and potatoes until slightly coloured. Remove from wok. Heat more oil and fry a knob of ginger, grated, one or two garlic cloves, chopped, a tablespoon coriander powder, tsp cumin powder, tiny bit of chilli powder, 1/2 tsp. turmeric (If you can't be bothered to mix your own spice, use curry powder), a tsp. sugar. After a few seconds when all this is nicely fried up, add one tin of good plum tomatoes, squashed. (Being fastidious, I remove the tops where the stalk used to be.) Cook for a bit,  then put the courgettes and potatoes back in, with 3/4 of a pint of water and any bits of Indian chutney you have to hand. It's a good way of using up the residue left in the bottom of the jars! I always keep mine for this purpose. Skim as necessary. Cook until a lot of the liquid is evaporated and the veg. is just done but not too soft. Voila! Serve with savoury rice, more chutney and Indian bread. 

This dish will freeze beautifully. Courgettes otherwise frozen turn to mush.
